A SUMMARY
Learn to work with organic Spelt, Emmer, Einkorn and Khorasan. These wonderful grains are more sustainable than modern wheat and are often easier to digest too. However, because they have a different balance of the proteins glutenin and gliadin (that make gluten) they behave differently to modern wheat and can be tricky to handle. In this class you will learn how to work with them and make some delicious breads and crackers. This class is best for those with a little baking experience.

​I am a passionate baker with a love for sharing and teaching others. As a member of the real bread campaign I am keen to promote the health, financial and feel-good benefits of baking and eating real bread. Being half Swedish, I was lucky enough to be brought up with a pretty constant supply of delicious homemade bread and buns and I learnt a lot just by helping my mum in the kitchen. In 2011, I learned to bake bread formally at the Lighthouse in East Sussex; a great artisan bakery run by a passionate team. Since then I’ve baked virtually every day and have been running classes in my home and in schools since 2011. One recent student said "Anna was brilliant throughout, pitching the course a just the right level and providing a tasty lunch and afternoon tea in the garden." "... a very natural teaching style, very welcoming and ensure(s) everyone is included and supported."

To recognise how changes will affect the outcome, for example: time, temperature, quantity of ingredients and substituting ingredients.

No refunds are given except in the case of a cancellation by the Mentor.If, for any reason, you can’t make the class and you let me know up to one month before the class date, I will offer you an alternative date or a full refund. Up to two weeks before the class I will offer you an alternative date or 50% refund. If you give less than two weeks notice I cannot offer a refund because it is unlikely that I will find someone to take your place at such short notice.

My experience is an educational activity and the 14-day cooling-off period under the Consumer Contracts Regulations 2013 therefore applies. After the 14 day period my standard policy will apply.
