A summary
Our colleague Janet Cousins designed this L2 course for Forest School Leaders and anyone involved in campfire cooking, preparing, or supervising the preparation and cooking of food outdoors. This includes Scout/Guide Leaders, Play Leaders, Outdoor Pursuits and Adventure Leaders, Youth Workers, Early Years Practitioners and even outdoor school BBQ caterers. Everyone who works with food is responsible for safeguarding the health of those who consume food that has been prepared, processed, stored, or sold by them. We were keen to develop an accredited Food Safety offer with Janet, bringing together our Forest School training expertise and her food safety specialism with 25 years of experience in the industry. She has taught Food Safety and Nutrition and owned a food business. Janet is a member of the Chartered Institute of Environment Health. This course is an integral part of our Level 3 Forest School training, so you will join a cohort of trainee Forest School leaders to gain this L2 Outdoor Food Safety accreditation. The course is accredited through ITC First. The day will be an opportunity to learn new things about working with fire, share recipes and foraging tips, and brush up on your firelighting and tending skills.

Love cooking and adventure and being outdoors
I have always loved to cook and have taught Food Hygiene for the past 28 years. I wrote the Outdoor Food Safety course 4 years ago after shadowing a Forest School Leader. Recently it gained an ITC level 2 accreditation as well as 8 hours CPD and I encourage all leaders and trainees to get this qualification if they are handling food and cooking on a campfire. I hold a Certificate in Education - post-16 and an advanced certificate in Food Hygiene and keep up-to-date with all the legislation. I love teaching adults and sharing my knowledge with them, and always happy to give advice. My teaching style is very relaxed and I always like to ascertain what prior knowledge my students bring to the classroom as they will enrich the overall session with their own experiences.
Course overview
This experiential course is offered in two parts. Part 1 is offered online before Part 2 is offered in the woods. Part 1—This online course can be undertaken on your computer at your convenience. It can be followed over several days, and on completion, there is a multiple-choice exam consisting of 20 questions. You must have answered 70% or more of the questions correctly to achieve a Pass. The content closely follows the CIEH level 2 Food Safety award curriculum. Still, it addresses the issues in an outdoor setting where there may be no access to running water, refrigeration, or the facilities associated with a catering kitchen. Successful candidates can follow on with Part 2 of the Course. Features: • Appeals to all learning styles with interactive quizzes, video, and audio features • Allows learners to work at their own pace, testing their knowledge as they progress through the course • Provides a comprehensive glossary that helps those unused to the terms used in food preparation to understand their meaning and application Approximate time to complete – 3 hours Part 2 – A practical session outdoors in our Forest School site. This session is designed as an additional module to the practical Food Safety for Forest School and Campfire Cooking – Part 1. It applies the knowledge gained to the hazards associated with campfire cooking. Candidates must demonstrate the storage, preparation, and cooking of a campfire of their chosen dish after an initial classroom session. Candidates will bring their ingredients and cook in small groups. They will have completed Part 1 of the course before progressing to Part 2. Features: • Provides a simple suite of self-assessment documents that are implemented in the practical session and whose templates can be used in candidates’ own Forest School or at Camp • The self-assessment (HACCP) documents can be used to provide evidence of due diligence, which may be inspected by your local Department of Environmental Health • Facilitates discussion on various potential hazards to reach acceptable solutions A certificate of competence will be issued to successful candidates after completing parts 1 and 2. This course is updated regularly to include the latest legislation and legal requirements for keeping food safe.

Cancellation Policy
Cancellation or Alteration by the Learner On confirmation of the cancellation from WTFI in writing, the Learner must pay a cancellation fee at a percentage of the course fee: 50% between three months and up to 1 month before commencement of training. 75% between 1 month and one week before commencement of training. 100% in the final seven days before commencement of training or once training has commenced

My experience is an educational activity and the 14-day cooling-off period under the Consumer Contracts Regulations 2013 therefore applies. After the 14 day period my standard policy will apply.
